  • 2 cups rolled oats
  • 1 cup kasha (toasted buckwheat)
  • ½ cup sliced almonds
  • 2 tbsp chia seeds
  • 1 tsp ground cinnamon

  • ¼ cup olive oil
  • ⅓ cup maple syrup
  • 2 egg whites (helps bind the granola for clusters)

Instructions

  1. Preheat oven to 350°F
  2. In a pot, combine the oil and red pepper flakes and bring to a simmer. Once simmering turn off the heat and add the cinnamon. Stir to combine. Allow to cool for 5 minutes.
  3. Once cooled, strain the oil through a fine mesh sieve into a mixing bowl. Discard the red pepper flakes.
  4. To the mixing bowl, add the oats, kasha, chia seeds, almonds, maple syrup, salt, and whites. Mix to combine.
  5. Transfer mixture to a parchment lined baking sheet. Spread the mixture evenly over the baking sheet.
  6. Place the baking sheet in the oven for 30 minutes. At the 15 minute mark, remove the sheet from the oven, mix the granola and return to the oven for the final 15 minutes.
  7. Once baked, remove from the oven and allow to cool.
